Friday night is pizza night. It's a ritual wrapped in comfort, childhood sleepovers, and that first bite of something cheesy, doughy, and hot out of the oven. For many, it’s still a standing tradition—low effort, high satisfaction.
But for those of us who are twintoleranters (both gluten- and dairy-intolerant), pizza night can feel more like heartbreak on a plate. The cravings are real, but the options are few. And let’s be honest—most gluten-free, lactose-free alternatives still taste like compromise. It’s the kind of thing that chips away at your Italian soul, one dry cauliflower crust at a time.
So imagine our surprise when, during a casual walk through the neighborhood, we stumbled across a place we’d never tried before: Slim & Husky’s.
Originally from Nashville, now also in Atlanta and Memphis, Slim & Husky’s is a fast-casual, artisan pizza shop that blends urban culture with creative, build-your-own pizza flair. It looked cool, it smelled amazing, and normally—based on past experience—it would’ve been a hard “no” for us.
But then we saw it: gluten-free crust available. Not just for their build-your-own pizzas, but also for their signature pies.
And then came the kicker: they were James Beard Award Semi-Finalists in 2023. That’s not your average corner pizza joint. That’s culinary credibility with a capital C.
In true TGIF tradition—and with expectations officially raised—we easily navigated to the Gluten-Free Pizza Section and placed our order. You can choose your size: 10” (Slim) or 16” (Husky), plus sauce, cheese (vegan optional), toppings (many vegan-friendly), and a drizzle.
We went classic with a Build Your Own Gluten-Free Pizza for delivery: OG red sauce, mushrooms, Italian sausage, no cheese.

And let us tell you: it did not disappoint.
Let’s talk taste. These are some of the highest-quality toppings we've tried—PERIOT. However, a word to the wise: if you’re not into heat, be mindful of your choices. That spicy red sauce and spicy pepperoni bring serious kick. 🌶️🥵
The crust had that coveted “wheat-like” chew and held up beautifully under generous toppings. The sauce was rich and tangy, the ingredients were fresh, and for once, we didn’t feel like we were eating a “safe” version of something better—we felt like we were eating pizza. The kind you actually want. The kind you finish.
Even better? When the pizza arrived, it was sealed for safety in a GLUTEN-FREE specific box—which came in a different shape than the standard pies. That detail alone gave us an immediate sense of confidence in their protocols and cross-contamination care.
Summary
Even the non-twintoleranters in our group preferred the gluten-free crust. 🤯🍕
