Pork Cottage Cheese Meatballs

Ingredients

  • 1 lb pork (or fave ground meat)

  • 1 lemon zest

  • 1 egg

  • ½ cup breadcrumbs @4cfoods 

  • ¾ cup @lactaid cottage cheese

  • 1 tsp @cavendersgreekseasoning

  • 1/2c spinach (or fave greens), raw or steamed

  • Salt and pepper to taste

Preparation


  1. Chiffonade your greens

  2. Mix everything together (DO NOT OVER MIX)

  3. Roll mixture into balls (don’t overmix)

  4. Bake at 400° for 20–25 min until golden.

  5. Meal prep tip: undercook slightly if you’ll reheat later 👌
